Johan Segers has been shaving high culinary peaks for years and swears by a pure and simple kitchen. His specialty at Njam! is fish. And when Johan does something, he does it thoroughly. Every week he takes us to the fish market in Nieuwpoort. There he waits for the fishermen early in the morning. They provide fresh fish straight from the boat, which Johan prepares on site. Our fish chef will work with well-known species such as sea bass, skate and North Sea sole. But less popular varieties are also discussed
